Gluten Free, Vegan Focaccia

Ingredients

  • 2 Cups Gluten Free Flour (my go to is the PC Brand)
  • 2 tsp. Baking Powder
  • 1/2 tsp. Sea Salt
  • 1 1/2 Cups Sparkling Water
  • 2 tbsp. Olive Oil
  • 1 tbsp. Maple Syrup

Herbed Oil

  • 2 tbsp olive oil
  • 3 gloves minced garlic
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp sea salt

Instructions

  1. Preheat your oven to 450 degrees. Line a baking sheet with parchment paper.
  2. In a small bowl, mix together all of the ingredients for the herbed oil. Set aside for later.
  3. In a medium sized mixing bowl, whisk together dry ingredients. Add sparkling water, olive oil and maple syrup. Mix until well blended.
  4. Pour batter onto baking sheet and spread evenly with a silicone spatula. Dough should be about 1/2 inch thick.
  5. Use fingers to poke indents in dough about 1 inch apart. Spread herbed Oil over the top of the dough.
  6. Bake bread for 20-22 minutes, until golden brown. Rotate after 10 minutes.
  7. Let cool and serve warm.

Note: I have recently played around with using room temperature vs cold soda water. If you are looking for a puffy, pillowy bread, use room temperature soda water. If you are looking for it to be a little chewier, go with cold.
